Easy Chicken Curry



Recipe Name:  Easy Chicken Curry

Story: This recipe came from my friend, Chris (O’Meara) who never liked to cook but this dish was always a winner.  Chris & I have been friends since I was 7 years old!  She gave me this recipe shortly after we married - now over 40 years ago!

Ingredients:
1 can cream of chicken soup (can use any cream of soup)
1 c. Mayo
1 c. grated sharp cheese
Juice of 1 lemon
2 tbls curry (or more - can be mild or hot curry depending on your taste)
Cubed chicken breasts - 2 or 3 breasts

Directions:
Mix everything except chicken.  Put chicken cubes on bottom of pyrex pan.  Cover with mixed ingredients.  Bake at 350 for 40-50 minutes.  I usually cover the pan for the first 30 minutes, then allow it to brown during the last 10 minutes or so.
Serve over rice

Notes:
When I was vegetarian I used cream of mushroom or cream of celery soup and tofu cubes instead of chicken
