Blender Hollandaise Sauce

 


Recipe Name: Blender Hollandaise Sauce

Story: As I was planning to make Eggs Benedict for John’s birthday this year, I was reminded of my mom’s blender Hollandaise (taken from Joy of Cooking).  She used the recipe for artichokes (we were the odd family that actually ate artichokes in our time), and occasionally to pour over asparagus or broccoli.  My dad especially liked it over broccoli, a vegetable he was not overly fond of, due to his mother overcooking it when he was growing up.  But crisply cooked and with hollandaise, he was a fan!

Ingredients: 
  • 3 egg yolks
  • 2 Tbsp. lemon juice
  • Pinch of cayenne pepper
  • 1/4 tsp. salt
  • 1/2 cup butter (1 stick)
Directions: 
  1. Put the egg yolks, lemon juice, cayenne, and salt in a blender. 
  2. Melt the butter until it is hot and bubbling (this is easiest to do in a microwave). 
  3. Blend the egg yolks on high for a few seconds, and then pour in a steady stream of hot bubbling butter. 
  4. The hollandaise should now be done; if it isn’t thick enough, continue to blend for a few more seconds. If the sauce is too thick add a tiny amount of lemon juice or water. 
  5. Taste and add salt, cayenne, or lemon juice as needed.
Notes: 
The sauce must be hot when served; either make it at the very end or keep it warm by putting the blender container in warm (not hot) water. This makes enough for 3 servings of Eggs Benedict or Rockefeller and I usually only make it for 2. I’ve tried making a smaller amount and it doesn’t work; without the full amount of bubbling hot butter, there isn’t enough heat to cook the eggs. Leftover hollandaise makes a terrific sauce for asparagus or other green vegetables. To use leftover hollandaise, slowly reheat the sauce in a water bath.

Manhattan Tuna Chowder

Ingredients: 
  • 2 diced bacon slices
  • 1 large onion sliced
  • 2 cup cubed, pealed?, potatoes
  • 1/2 cup diced celery
  • 2 cup tuna drained
  • 1 lb can tomatoes
  • 2 cup water
  • 1 tsp salt
  • 1 tsp thyme
  • 1/4 tsp pepper
Directions: 
  1. Cook bacon until crisp. Add onion, cook until tender, but not brown.
  2. Add potatoes, carrots, celery, tomatoes, water, salt, thyme, and pepper.
  3. Simmer, uncovered, 30 minutes
  4. Add tuna; simmer 5 minutes longer.
  5. Serve hot.
Notes: 
For bacon, oil or butter may be substituted. You can use minced onions (dried), canned potatoes, and eliminate the carrots or celery if you don't have any. Just add a little more of something else.

Spicy Pulled Pork

Ingredients: 
  • 1 stick butter
  • 2 cups vinegar, apple cider preferred, white works too
  • 1/2 cup cayenne powder
  • 1/2 cup crushed red pepper flakes
  • Salt to test
Directions: 
  1. Cook pork butt however your preference until fall apart tender. Easiest method is in a crock pot with some water.
  2. Once pork butt is done, pull it / shred it (can just do it in the same crock pot)
  3. Melt the butter in a small pot, then add all other ingredients.
  4. Pour mixture all over the pulled pork and mix in.
  5. Serve on hamburger bun / bread.
Notes: 
This sounds like it would be very spicy, and although it is pretty spicy, the vinegar does balance it out. It has an excellent "north carolina" pulled pork flavor.

Popovers

Ingredients: 
  • 3 eggs
  • 1.5 c flour
  • 1.5 c milk
  • 1/2 tsp salt
  • 1 tbls olive oil
  • 1 tbls sugar

Directions: 
Prep time - 10 - 15 mins
Can be made ahead - no
Makes 6
  1. Preheat oven to 450
  2. Spray pans with pam
  3. Put eggs in blend and stir
  4. Add remaining ingredients and stir on low speed just until blended
  5. Fill popover pans 3/4 full
  6. Bake 15 min at 450 then at 350 for 15-20 min
  7. When finished baking, prick each popover with a fork to release steam (otherwise they'll get soggy)
  8. Serve with real butter

Notes: 
Do not open oven during baking until done and golden brown
Doubles nicely

Cocktail Nibbles

 


Recipe Name: Cocktail Nibbles

Ingredients: 
  • 6 oz pkg pretzel sticks
  • 1 lb or 2 8 oz cans salted peanuts
  • 1 pkg crisps rice chex cereal
  • 1 pkg 8 cups cheerios
  • 1.5 cup butter
  • 1/4 cup worcestershire sauce
  • 1 tsp garlic salt
  • 1 tsp onion salt
  • 1 tbls celery salt
Directions: 
  1. Start oven at 225 for very slow cooking
  2. Break the thin pretzel stick into even smaller pieces and mix with peanuts and both dry cereals
  3. Heat butter or margarine until melted and stir in worcestershire sauce, garlic, onion, and celery salt.
  4. Pour over cereal mixture, and mix thoroughly
  5. Bake 1.5 hrs, stir every 15 mins.

Hamburger Stroganoff

Ingredients:  

  • 1/2 or 1 cup minced onion
  • 2 cloves garlic or garlic salt
  • 1/2 cup butter
  • 1 lb ground chuck
  • 2 Tbls flour
  • 2 tsp salt
  • 1/4 tsp pepper
  • 1 cup sour cream
  • 2 tsp minced parsley
  • 1 8oz can sliced mushrooms
  • 1 can cream of chicken soup

Directions:  

  1. Saute onion and garlic in butter
  2. Pour off butter and save it
  3. Add meat and brown
  4. Pour off fat and add butter you saved
  5. Add flour, salt, pepper, and mushrooms
  6. Cook 5 mins
  7. Add soup and simmer uncovered 10 mins
  8. Stir in sour cream
  9. Heat through and sprinkle with parsley
  10. Serve with noodles or rice

Mother's Roast Lamb


 

Recipe Name:  Mother's Roast Lamb

Story:  This is a photocopy of a recipe James' mom wrote.  She put together a book of all of her favorite recipes and the book was distributed to her kids after her death.  James said he ate this throughout his life, at least a couple times a year.  So the recipe is about 50+ years old.

Ingredients:  

  • Half / Whole leg of Lamb
  • Garlic cloves
  • Small jar of Dijon mustard
  • 1 cup of strong coffee
  • Instant coffee (optional, see note)

Directions:  

  1. Pierce the skin of a whole or half leg of lamb in 10 to 20 places, depending on size of roast
  2. Insert a slice (1/4) of a garlic clove under the skin in each slit
  3. Slather the entire roast with Dijon mustard (a whole small jar)
  4. Cook in an open roasting pan at 350 for 30 minutes per pound
  5. When half baked, pour 1 cup of strong coffee over the roast (makes dark gravy)
  6. Baste frequently
  7. Add some sour cream to the gravy

Notes:  

James remembers his mom using instant coffee too - coating it on the mustard before roasting.

Chicken Chop Suey

Ingredients:  

  • 6 spring onions, 1 in slice white, 1 in diagonal green
  • 1 Tbls grated ginger
  • 2 cloves garlic minced
  • 1 large onion sliced - halve first before slicing
  • 1 small green pepper sliced
  • 4 mushrooms - quartered
  • 1 pimento
  • 5 oz water chestnuts
  • 5 oz bamboo shoots
  • 2 cups chicken stock
  • 3 Tbls low sodium soy sauce
  • 2 Tbls corn starch
  • 1/4 cup peas
  • 2 cups bean sprouts
  • 2 chicken breasts

Directions:  

  1. Very quickly stir fry white of onion, garlic, and ginger - 1 minute, remove and save
  2. Stir fry chicken 2 min
  3. Then add regular onion, pepper, pimento, tops of green onion, onion mixture, water chestnuts, bamboo shoots, mushrooms, bean sprouts, peas
  4. Add stock with soy sauce and cornstarch

Cucumber Thai Salad

Ingredients:  

  • 2 Cucumbers sliced very thin
  • 1 Yellow, red, orange pepper slice thin strips
  • 2 jalapeno seeded, chopped
  • 1 Tbls dark sesame oil
  • 3 Tbls rice wine vinegar
  • Juice of 1 lime
  • 2 tsp sugar
  • 1/4 tsp salt
  • 3 Tbls fresh mint

Directions:  

  1. Put vegetables together in bowl
  2. Mix remaining ingredients together and then pour over vegetables and toss
