Ingredients:
- 2 diced bacon slices
- 1 large onion sliced
- 2 cup cubed, pealed?, potatoes
- 1/2 cup diced celery
- 2 cup tuna drained
- 1 lb can tomatoes
- 2 cup water
- 1 tsp salt
- 1 tsp thyme
- 1/4 tsp pepper
Directions:
- Cook bacon until crisp. Add onion, cook until tender, but not brown.
- Add potatoes, carrots, celery, tomatoes, water, salt, thyme, and pepper.
- Simmer, uncovered, 30 minutes
- Add tuna; simmer 5 minutes longer.
- Serve hot.
Notes:
For bacon, oil or butter may be substituted. You can use minced onions (dried), canned potatoes, and eliminate the carrots or celery if you don't have any. Just add a little more of something else.
