Recipe Name: Pressure Cooker Chicken Curry

- 2 lbs chicken breast or thighs
- 16 oz canned coconut milk
- 16 oz canned tomato sauce
- 6 oz can tomato paste
- 2 cloves garlic, minced
- 1 cup onion, chopped or 1/4 cup dry minced onion
- 2 tbsp curry powder
- 3 tbsp honey
- 1 tsp salt
Directions:
- Combine all of the ingredients, except for the chicken, in the Instant Pot and stir to combine.
- Add the chicken. Close and lock the lid
- Select the Manual setting and set the cooking time for 15 minutes at High pressure.
- Once cooking is complete, let the pressure Release Naturally for 15 minutes. Release any remaining steam manually.
- Open the lid and gently stir.
- Serve with cooked rice, potato or peas.
